A lighter and effervescent Jungle Bird variation: tropical, citrusy, and complex. This drink is named after a hummingbird native to Panama. We substituted the typical aged rum and Campari for a white rum and Aperol to make this drink a bit more refreshing. Great for a brunch drink where you can tell all your friends they’re boring for just having Mimosas.
6 oz of ALLDAE Pineapple Cascara
1.5 oz white rum (we like Flor de Caña 4-Year)
0.75 oz Aperol
0.5 oz fresh lime juice
Garnish: Pineapple fronds
If you’ve got a shaker, shake the rum, aperol, and lime juice together with ice and pour over fresh ice in a highball or Collins glass and top with Pineapple Cascara. Stir briefly with a barspoon. If you don’t have a shaker just add all ingredients over ice and give it a quick stir.
